Chicken biriyani is a delicious and popular South Asian dish that combines aromatic rice with flavorful chicken, spices, and herbs. Here's a recipe to make chicken biriyani,

Ingredients:

  • 2 cups basmati rice
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 large onion, thinly sliced
  • 1/2 cup plain yogurt
  • 2 tablespoons vegetable oil
  • 2 tablespoons ghee or clarified butter
  • 2 cloves garlic, minced
  • 1 inch piece of fresh ginger, peeled and grated
  • 2 cinnamon sticks
  • 2 bay leaves
  • 4 cardamom pods, lightly crushed
  • 4 whole cloves
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 2 cups water
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup raisins (optional) 
Instructions:

  1. Rinse the rice several times in cold water until the water runs clear. Soak the rice in water for 30 minutes.
  2. In a large mixing bowl, mix the chicken pieces with yogurt and set aside.
  3. Heat the oil and ghee in a large pot over medium heat. Add onions and cook until golden brown, stirring occasionally.
  4. Add garlic, ginger, cinnamon sticks, bay leaves, cardamom pods, cloves, cumin seeds, and coriander seeds to the pot. Cook for 2-3 minutes until fragrant.
  5. Add the chicken and yogurt mixture to the pot, and stir to coat the chicken with the spices. Cook for 5-7 minutes until the chicken is cooked through.
  6. Add turmeric, cayenne pepper, and salt to the pot, and stir to combine.
  7. Drain the rice and add it to the pot with 2 cups of water. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid. Cook for 20-25 minutes until the rice is tender and the liquid has been absorbed.
  8. Remove the pot from heat and let it sit, covered, for 10-15 minutes to allow the flavors to meld.
  9. Remove the cinnamon sticks, bay leaves, and cardamom pods from the pot.
  10. Fluff the rice with a fork and stir in chopped cilantro and mint leaves. If desired, add raisins.
  11. Serve hot with raita or chutney on the side.
